img_0234Now open to the general public, the new CC101 is a place for the entire community to find nutrient-dense foods such as pasture-raised meats, raw milk, soy-free eggs, low or gluten-free breads and pastries, and of course a remarkable array of probiotic-rich fermented foods: sauerkrauts, kombucha, natural sodas, health tonics, kraut juices, water-kefir and naturally-fermented sauces. And don’t forget the ingredients and supplies to make your own! We carry everything you need to do your own home fermenting, including fermentation crocks, supplies and fermentation starters.

Elaina loves to teach about preparing healthy, healing foods, and she brings in other teachers to share their unique knowledge as well. We’re featuring classes which cover subjects such as: traditional, fermented, probiotic sodas; working with raw dairy to make your own raw yogurt, kefir, and cream cheese; fermenting fruits and vegetables; cooking to support the GAPS diet; and much, much more! View our upcoming classes and events.

Events

Mark McAfeeCC101 has hosted a remarkable range of events, and we don’t expect that to change. You can expect to see a variety of speakers and events every month on the CC101 calendar. We’re also looking forward to the return of the wonderful “Food & Film Nights” where we’ve screened films such as Farmageddon, Fat Head, Genetic Roulette, and King Corn.

We’re planning to host speakers on topics of “real food” interest, such as “Share the Raw Milk Secret,” with Mark McAfee of Organic Pastures Dairy, and “Nourishing Traditional Diets,” a must-see introduction to the work of pioneering nutritional researcher Dr. Weston A. Price. We’ll be regularly featuring a presentation byCC101 founder Elaina Luther on our Smithsonian-certified, bird-friendly coffee. You’ll never look at coffee the same way again! Dining!

img_1420As part of our community-building philosophy, we will have a place for you to sit down with friends old and new and share a mug of coffee, a cup of tea, and a light meal. Everything we serve is certified organic, grass-fed, pasture-raised and GMO-free. We’re still working on the menu, but one thing you can count on will be Kepner Farms rotisserie chicken and our new signature Broth Bowls, made with pasture-raised chicken or grass-fed beef, and with a variety of nutrient-rich add-ins for an instant, unique soup! Don’t worry, there will be fare for vegans too! We’ll be serving sandwiches, salads, pastries and of course our house-fermented sauerkrauts. Come in and visit the beverage bar, where we are now serving kombucha and natural soda on tap, as well as our Smithsonian-certified coffee (organic, shade-grown, single-estate and bird-friendly) and pasture-raised bone broths. Our menu varies a bit from day to day, but view a recent menu to give you an idea of what we’re serving up!

 

The Fermentation Room

img_4349Take a peek at our new fermentation room! Here is where our sauerkrauts, kombuchas and kvass go through the magic process of fermentation, to bring you the health-giving properties of natural probiotics. By isolating the crocks of fermenting vegetables and kombuchas, there is no risk of contamination from unwanted bacterial cultures. CC101 owner and founder Elaina Luther is a master fermenter and fermentation is what we’re all about! The fermentation room can be viewed through a large glass window in the retail store.
